Chia Almond Bread
Bread can be one of the biggest blockages for people when trying to make dietary changes for themselves or family. A slice of bread with your favourite toppings is hard to go without as either comfort food or for convenience. I too am a big fan of bread and known to go overboard which is why I often have to do a Cleanse and drop wheat out of my diet for a bit. This is my fall back when I just want some bread. I am posting this recipe with the how to make your own Almond Mylk recipe, as when I make Almond Mylk then I use the almond pulp that has resulted from straining the Almond Mylk as the almond meal for this recipe. No waste!!
Ingredients
1 cup almond meal (use your almond pulp from making Almond Mylk if you have some)
2 Tbs chia seeds
30 mL water
3/4 cup arrowroot, tapioca or buckwheat flour sifted
1 tsp bicarb soda
2 Tbsp apple cider vinegar
3 eggs
pinch of salt
Directions
preheat oven to 175 deg C
soak Chia seeds in water in separate dish, stir occasionally over 15 min
sift flour and bicarb into bowl and add almond meal & salt, mix well using a whisk to break up clumps and distribute evenly
add eggs, soaked chia seeds & apple cider vinegar, whisk so no clumps
pour thick mixture into baking paper LINED loaf baking tin
bake 25 mins or until golden brown and springy/firm to touch remove from oven and turn out to cool
notes: adjust to 40-45min if doubling mix
