PEAR and VANILLA GRAIN FREE BIRCHER MUESLI

Serving size 1 medium bowl.

For all those who are avoiding gluten, either permanently or on a gut healing program this is a lovely alternative. It is grain free, easy to digest and supportive for a sluggish bowel.

Prep time: 5 minutes, plus overnight soaking

pinch of Vanilla Bean Powder
1 tspn raw honey
1/2 pear, grated with skin
1 tablespoons extra virgin coconut oil
1/2 cups good-quality store-bought yoghurt (see how to make your own)
2 Tbsp cup desiccated coconut
1 Tbsn chopped raw almonds
1 Tbsp chopped raw walnuts
1 Tbsp sesame seeds
1 Tbsp chia seeds
a pinch of natural salt
pinch of Cinnamon Powder

Combine the vanilla, honey, pear, coconut oil and yoghurt in a medium bowl. Add the remaining ingredients and mix well to combine. Leave to soak overnight, and enjoy for breakfast the next morning topped with a spoonful of yoghurt and berries or fruits of choice.

Tips: You can double or quadruple this mixture and store it in a jar in the fridge for up to 3 days. This is also delicious made with grated apple or 1/2 cup of grated or mashed fruit.
