Nourishing Bircher Muesli

I personally prefer the Bircher muesli to be untoasted, but the kids like the toasted. I make up a jar of the natural muesli to keep and use as needed. Bircher comes from Swiss origins in the early 1900's and is traditionally soaked overnight, this helps the muesli to be more easily digested and allows all the wonderful nutrients in the nuts, seeds and grains to be absorbed. I would recommend this so you are ready to go in the morning. Traditional Bircher is also usually only oats, however I like to add nuts and seeds for added nutrition and crunch, this does increase the need to soak mix overnight so that they are all softened to a delicious mushy easily digested feast.

The Bircher Mix

2 cups Oats
1 cup Coconut Flakes
1/4 cup Pumpkin Seeds
1/4 cup Sunflower Seeds
1/4 cup Flax Seeds
handful of chopped almonds

Combine all Bircher Mix ingredients and store in an airtight jar ready for use. Use organic ingredients and mix it up to what you like.

Breakfast Bircher

1/4 - 1/2 cup Bircher mix
water or apple juice
squeeze lemon juice
1/2 grated apple
couple of scoops natural yoghurt
fresh seasonal fruit topping
maple syrup/sweetener (optional)

Mix your quantity of Bircher, water and lemon juice in your brekky bowl and place overnight in fridge.
In the morning mix through apple and yoghurt.
Top with fruit of choice and drizzle lightly with sweetener if needed. The apple sweetens the mixture so you may not need any sweetener, I suggest you try it without and see how you go.
