The Mighty Green Pesto
Robust and full of flavour make sure you get comfortable with being able to whip up a batch of pesto at a moments notice. Easy to make once you know how and when you understand your base ingredients. You may find a kale only pesto won’t be as tasty and will need some herbs added to it. Essentially you are working to create a delicious pesto that can be drizzled or dolloped on your favourite vegetables, soups or meats to lift a dish to complete deliciousness.
What you need
1 cup of some green leaves (kale, spinach, basil, coriander, mint, mix it up)
1/4 cup nuts (or seeds if dealing with nut allergies)
1 clove garlic
1/3 cup extra virgin olive oil
1-2 Tbsp apple cider vinegar
sea salt and ground black pepper
Combine all ingredients in blender or food processor and mix to the desired consistency, add a little water if too thick.
This can be stored in a glass jar in the fridge. Make sure there is oil covering the ingredients to keep fresh.
Note: This is a base recipe. Perhaps for your first time make a traditional basil & pine nut pesto.

2 Tbsp of fine grated parmesan cheese
sea salt & pepper

a dollop on soups - minestrone, tomato based soups
mix through cooked quinoa salads
with eggs for breakfast
over cooked fish
drizzled over a vegetable frittata
