Sautéed Greens with Lemon Zest

Get your greens in with this quick and easy super delicious dish. It has a fantastic fresh taste and is so quick to make that once you have made the dish the first time you will go back again and again, and it could well become one of your goto recipe staples.
Adapt this recipe with what you have on hand. I didn't have any broccoli in the fridge the other day, but that didn't stop me from making it, it was still extremely delicious and satisfying.

Bunch of green asparagus
2 Tbsp coconut oil or ghee
1 bunch broccoli or broccolini
2 cloves garlic
2 zucchini, thinly sliced
150g fresh green beans, okra or asparagus
1/2 bunch kale, tough stems removed & leaves coarsely chopped
finely grated zest and juice of 1 lemon
1 cup chook or other homemade stock

Heat oil or ghee in a large frying pan over medium heat, add the garlic and cook until fragrant, about 1 min.
Just before garlic starts to brown add zucchini and cook until slightly golden, about 30 secs.
Add Broccolini, green beans, and kale and saute until broccolini is crisp, about 2 mins.
Add stock and cook a few mins, add lemon zest & juice, season with sea salt and fresh cracked pepper and serve

Add as a side dish to some tasty lamb kebabs.

I recently had this for dinner with some smoked trout on the side, the flavours melded so well together I couldn't work out which was the hero of the dish, the fish or the greens.

Consider using left overs for an egg dish or school lunches (if you have any leftovers that is)
