Chai-spiced Sunflower Truffles

A pre-made batch of these are great to keep in the fridge.

Nut free and will help tide you over to the next meal or on a day you need a little lift.

2 cups raw sunflower seeds

1 Tbsp ground cinnamon

1 tsp ground ginger

1/2 teaspoon ground cardamon 

pinch sea salt

1 cup pitted Medjool dates

2 Tbsp extra-virgin olive oil

1-2 Tbsp pure maple syrup or raw honey

unsweetened shredded coconut

Place sunflower seeds, spices & salt in a food processor and process until finely ground. 

Add pitted dates & oil. Process until combined & sticky and try rolling into a ball. If not holding together add maple syrup and process again.  Once the mixture holds together then roll into balls and roll in shredded coconut.  

Store in the refrigerator for up to 2 weeks.
